Really? SMW has my favorite water levels in any Mario game, mostly because I love the way Mario controls underwater in it.
The levels themselves are fun, I think. There's variety between traditional go-right to win, and also some maze-like stuff like the one in forest of illusion, or levels with water and ground sections, like vanilla dome 2.
Special mention to Soda Lake for have Torpedo Ted, and Mondo in the Special World, a unique impementation of water in an athletic level.
