It just depends on the game too much.

A huge issue Sonic has is 'going fast' while the sprite and everything being so zoomed in you can't navigate or avoid specific things. Mario was also a little too big but not as fast so it wasn't as painful.

On the reverse, for 240p, sprites that are too small lack fine detail requiring over exaggerated movement. However for something newer like Broforce it works really well.

I go with scaling sprites like Samurai Shodown or SF2 size for 240p fighters though.

There is no "ideal size." Spritework should always be judged by how much information it conveys, as well as how efficiently it conveys that information.

Pic related. The Ryu sprite on the left, despite being at a much higher resolution, is actually somehow -less- detailed than the sprite on the right. Size does NOT matter in this instance.
