Trying to avoid the obvious suggestions (Final Fantasy, Tony Hawks etc):

Umihara Kawase Shun - physics-based platformer, probably my favourite game on the system
The translation of Policenauts if your PSX is chipped - not as good as Snatcher but still worth a go
Super Puzzle Fighter 2 - excellent puzzle game, a bit like Tetris
DoDonPachi - classic shmup
The Adventure of Little Ralph - really tight platformer
Rapid Reload - Gunstar Heroes clone
Vagrant Story - not really that obscure but genuinely excellent RPG and one of the best looking RPGs on the PSX

I'll take a look at the titles recommended in this thread, but any good 1st/3rd person shooters? The titles that come to mind are tomb raider, resident evil, parasite eve, dino crisis. But are there any others that have really enjoyable gameplay?

For FPS try Medal of Honor, the first one is legitimately good in terms of atmosphere and gameplay.

Also Final Doom is great on the PSX, I don't like the regular PSX Doom because the sector lighting is garish and the replacement music is boring. Final Doom is a massive improvement in those aspects though, the sector lighting is now much more subtle and actually enhances the games look and moodiness. The music is also much darker and creepier. Definitely give it a try.

Alien Trilogy has good atmosphere but the shooting mechanics are not smooth, still give it a try. It's a decent game overall. Alien Resurrection is supposedly good too but I never played that one.
