Psx would be the easiest, just get the toc right and add a few files that can be created by studying psx iso's, then youre set to make an iso. I don't know wtf you could use it for, unless you have an sdk to actually develop for it, but you can definitely make a dummy iso that a PlayStation emulator can read as a PlayStation game. It'll crash or just freeze after the logo animations, because it's a just filler image.

i have made gameboy roms, not finished anything tough.
i am mediocre at programing, and took me a week to learn bacics on how to program for gameboy assembly

i recomend visual studio code, to program in i found it simple to program for assembly in.
this guy has tutorial for gb in c language Maybe start here it more fun , but the compiled c code uses more procesing, and after encountering problem with arrays, i could not understand i decided to learn assembly
