I don't like things that are popular or mainstream because my taste in games is what makes sets me apart from the crowd. That's why the best Castlevania is clearly X68000. Rondo and Bloodlines are also valid choices

SCV4(Easy, but that autoscroll level near the end is a difficulty spike)
Bloodlines(Easy/Medium depending which character you use, but the final area does throw a few bosses at you in a row in classic Castlevania fashion)
Rondo of Blood(Boss rush at the end, but it's not that bad when you have jump+dodge and superpowered secondary weapons, even easier if you use Maria instead of Richtor)
