Just get the card ability early on and the refine abilities. Turn enemies to cards and turn cards to magic. Boom, done. Then when you get diablos (also early) get encounter half or none and turn it off only when you need to level (meaning get more magic). FFVIII is so easy to cheese.

People complain about the orphanage reveal being the biggest issue with the plot, but mine is that headmaster Cid never gets called out on turning orphans into child mercenaries and giving them memory erasing monsters
If I was Squall and I realized that Cid is the reason I can't remember anything I'd gut him like a fish with my gunblade. And I definitely wouldn't stay in Garden after beating Ultimecia

What bugs me about the memory loss is how inconsistent it is. The level of the monster determines the spells you can draw from them. It's not counter-productive because the boost you get from junctioning better magic is higher than the stat increase the enemies get from leveling up and a lvl 100 bite bug is obviously not as strong as a lvl 100 behemoth.

Diablos, Brothers, Tonberry, Cactuar, Bahamut and Eden are not drawn from enemies, they're never missable. Add the mandatory ones (Quetzacoatl, Shiva and Ifrit) and you already have plenty of abilities.

I never used most of the spells, I just junctioned and left the characters at low health to spam turn switching until I got the limit. Later there was aura, which increased survivability, and meltdown which fucked everything's DEF stat. You could also replace meltdown with Doomtrain for free VIT 0.

Magic comes in single-use units that you can steal from enemies (1-9 units at a time) and store up to 100 of each spell on a character. There are also other ways to get spells, by converting items (basically crafting). You can link those spells to your stats to increase them.

"GF junctioning" means assigning a Guardian Force (kind of similar to FF6 espers) to one of your party members to give him/her the abilities of that GF.
The most important GF abilities are the magic junctioning abilities, which allow you to increase the character stats by linking them to magic. For instance, junctioning Fire to Str increases the strength, but you can also junction it to one of the elemental attack slots to increase the damage against enemies weak to fire. There are also slots for elemental defense and status attack/immunity.
In FF8 humans are weak on their own and most of their power comes from the GFs, there's even a command to switch all the junctioned GF and magic between two party members.

Why should being a Mime prevent you from using items by default? Miming is not everything you're able to do since you can choose other abilities.
The real reason is to force the player to make a choice, not everything the game does has to be justified logically. Being able to instantly switch between jobs and gain superhuman abilities is silly, so is equipping "the knowledge of the acients" to weapon slots or needing the plwers of a monster to use items.

The orphanage reveal is the ONLY thing this builds up to and it's inconsequential in the grand scheme of things. Going into FF8 I really thought the orphanage scene would have been a bigger scene.
