I've been playing F ZERO on the SNES for over 200 hours, nearly mastered it and now looking for a new game that I can pick up. All the retro games I've seen so far have stories which imo aren't replayable, any racing game would be suitable but I wanna try something else. Think tetris, mario kart, bomberman etc stuff like that. Fighting games and turn based combat aren't my thing.

Shmups from mid to late 90's (just pick whatever you want from Cave or Raizing's library, or something weird like Psyvariar), Puyo, Umihara Kawase, racers in general (sims are the deepest, but I recommend Wipeout 2097/3), 2D beat 'em ups like Final Fight, Cadillacs, Streets of Rage 2, all those infinitely looping score attack arcade games like Robotron.

Diablo (originally supposed to be a roguelike)
Anno, Zeus, Sim City
Any sp fps with large ammount of user made content like Doom, Quake or Half Life (Zven Co-op)
I also like getting user made multiplayer maps for Quake 2, 3 and UT and playing against bots.

tons of different character/team combinations. in sd3 you pick your 3 in the beginning of a new game, in star ocean 2 you have to recruit them one by one after you choose your protagonist (each protag gets a different exclusive party member that the other can't get). ive played sd3 4-5 times in my life, never gets old. amazing gameplay, amazing ost, amazing graphics, satisfying physics/engine and exploration. very easy to understand. gorgeous atmosphere. star ocean 2 i'll write some about later. gonna take a nap.

This is synonymous with fighting games and indeed any competitive game with deep mechanics.
But since you're a normie, you should probably stick to racing games and pick up shooters with multiplayer.
On the other hand, if you're feeling adventurous, you could try looking into Starcraft I for real-time strategy.
