I was absolutely hooked on the original Might & Magic series due to baby duck syndrome. The original came out in 1986, and it was only just last year I played through every single game... again.
It's satisfying, but slightly disappointing, to see those finishing screens inviting you to submit your score to a company that no longer exists.

I played M&M1 on the C64 - the machine it was originally developed for, IIRC. I recommend it.
M&M2 gets a bit slow on the '64, and disk swapping gets out of control - but the PC version has awful graphics and sound. Was there an Amiga (or other 16-bit contemporary with decent graphics/RAM) port? They might be the choice.
From M&M3 onwards, the PC version is perfectly fine. M&M3 goes a bit screwball with its timing loops, so an early-model 386 with VGA and wavetable sound card is what I'd recommend.
M&M4 and 5 don't need much special done. I've run them with a DOS boot disk on a Pentium III (last time I put it on bare metal), and they behaved exactly as they did on my 486DX2-66 that I first played them on.

Recently bought Eye of the Beholder on GOG. I don't have much time (or actually will) to draw my own maps but I also don't want to use completely revealed maps from the get go so...

I've never played EoB so someone else will have to give the details, but it varies by game how drastic the effect is of adding auto-mapping to a game designed around manual mapping.
With something like Wizardry or Bard's Tale, which have lots of map-confusion gimmicks, successfully mapping without getting lost is the majority of the gameplay, so adding auto-mapping (or just using full maps) destroys the game.
But if EoB doesn't really have mapping challenges to begin with (e.g. maybe it's all about combat and puzzle-solving instead, like modern built-in auto-map games tend to be) then it could be fine.

I completed EOB2 in 90's without drawing a map.
The dungeons are split into multiple floors and each floor is not too big.
I think there's only a few area where it's a bit confusing, like area with lots of tightly close teleporters.
You can leave some stuff on the floor so you know where you are when you step into a teleporter.

Ive been on a huge first person dungeon crawler kick lately. this thread has great timing. I've been playing Lands of Lore and its pretty fucking good. It also has some voice acting from patrick stewart lol. Check this one out for sure if you're into the genre. Puzzles arent retard hard or anything, has an automap and they dont hide grey keys on fucking grey floor tiles.

I use an Onyx Boox Max3 eink tablet with its builtin note taking application.
I designed a bunch of background templates so I can map without having to write coordinates.
Obviously that's only suited for games with a fixed grid. Having some way to tell your coordinates like DUMAPIC is extremely useful.
When I played Wizardry 5 and 6 I used A3 grid paper (centers from exercise books) and tried to guess which direction things went. On occasion I had to copy the map to a new sheet and shift the center because I reached the end of the line.

Just printed like 40 of these for some of the games I got in GOG like Wizardry 6 and 7, the Ultima games, Anvil of Dawn and Eye of the Beholder (all 3).

Wizardry 6 levels typically fit on one sheet, main exception being the river.
The tricky part can be figuring out where one map ends and the other begins since the IBM version uses the same tileset for every dungeon no matter whether it's a castle, caves, a mountain pass, mines, a pyramid, a crypt, a swamp, a forest or a temple.
Stairs will correspond over different floors but take a space.

Wizardry 7 only has a few spots worth mapping since orientation is less of a challenge.

In Ultima you can use peer gems to figure out the basics.

Personally I'd recommend starting with a game like M&M1 that gives you a fixed 16x16 grid and a spell to learn your coordinates without featuring too many confusing elements like spinners or teleporters as well as offering an easy way out of dungeons in case you get lost.
That way you can get a grasp on mapping without it being too frustrating or interfering with the game.
Key to mapping is analyzing what is visible from your position. Typically you can see three squares ahead with a light spell. Learn to map in a way that you can turn doors one way or add secret doors on walls.
