Dracula X Chronicles is technically the easiest way, but IIRC you have to beat the remake first to unlock it.
You can also play the original game by itself, you'll need to bind the controls though.

Yea Konami should realize the importance of making people remember the good games in the series. Releasing a collection with simon's quest and kid dracula and adventure1 really tarnishes newcomers perception of the series. Nintendo must be a pain in the ass over Adventure rebirth and the later handheld games, and they clearly saved Rondo and symphony for a standalone collection. They blew it badly.

What I'd really like for Symphony was if they made a special edition which adds some of the Saturn exclusive stuff, adds a New Game + hard mode, Maria mode, and the option to choose between the original voice work and the new one.

My pet theory is that the Goemon team was very pissed off by the many cuts and changes demanded by the burger localization team, so much that:
- the plot of the second game is a "love letter" to said team: deviant sex-crazed imperialist weaboos who want to mold the japanese culture they claim to be fun of, to an eyesore, soulless (the mecha have blank eyes and aren't piloted well) hybrid that panders to their sensibilities, often by force. The happy ending is the cast going "see our culture? it's look, don't touch" on the villain, himself a parody of a real admiral who broke japan's self-imposed embargo.
- the third game has a lot of trannies with implied giant dicks, incest NTR, and manji everywhere including a prominent one in the title screen
- the fourth game has sexual themes and a lot of national stereotypes.
- the gameboy game from 1991 only released localized in 1999.

Konami edited Kid Dracula for less, and the quiz translation omits Goemon references. That should be telling enough.
