what setup am I supposed to use? what video signal?

As long as you have a decent CRT and real hardware you're going to have a much better experience than most. If you like beautiful crispness and clear vibrant colours go for RGB. If you like your games filthy, blended and atmospheric, go for RF. Both are cool.

yea I am using original hardware, i dont use emulators. I am a repair tech, so I have many original consoles that I repaired and then modded ( 2600, snes mini, gen 1 and 2, tg16, n64 ..)

I want to use Svid for the most part because it is super crisp and looks great on the CRT and I got many svid modded consoles (atari, snes mini, gen 1 and 2) and the ps1 naturally outputs it
and the n64 iirc

Is whatever display you want but pairing vintage console with modern displays is somewhat incompatible. If you MUST do it you need an upscaler of some kind depending on what output format you use on your consoles. RGB is the ideal but many consoles don't output it without serious modification - a notable example being the NES

Does your CRT have Component?
If so, I recommend the HD Retrovision cables instead.
They are RGB cables with built-in Component transcoders so it's easier to plug your consoles on CRTs with Component or HDTVs.
They have a SNES cable, a Sega Genesis cable, a PS2 cable and a Wii cable, and they're making a Dreamcast cable.
For the PS1, however, you must get a Sega Genesis cable and a PS1 adapter because the PS2 cable only works with the PS2 and PS3 but supports higher resolutions like 480p and higher.
The Genesis cable with the PS1 adapter works with the PS1, PS2 and PS3, but it doesn't support 480p and higher.

For the ps1 you can use official ps3 s-video cables - scph-10480. They seem to be reasonably priced surprisingly. You may still need to import, my cables came from uk.
Not sure about the snes though.

Just do it how you want to. All anybody does here is talk shit about how others prefer to play games. If you're using original hardware, connecting any analog signal to an hdtv is going to look like shit no matter what, but if you don't mind that, then it's fine.

That being said, I have a few CRTs I got for free, and I opt for S-video for my systems just because those cables are really cheap and the video quality is nice.

Using a modern HDTV is fine provided it has decent latency, you turn off the processing and enable game mode. Just don't use composite, s-video at the very least but ideally RGB and invest in a decent upscaler. It comes down to personal preference but also don't stretch the image to 16:9 and don't use awful filters these trigger the PVM aficionados and typically look terrible anyway.
