Should I play the games as a fan of PSO?
I absolutely loved the atmosphere of PSO and would like to enjoy more, but I'm unsure weather it is even similar to the online games.

How does the gameplay hold up to todays standards?

PSO is really only Phantasy Star in name only. Besides a few enemy and item names and a sci-if setting, there isn’t much similarity at all.
That being said, if you like sci-fi themed RPGs, you really can’t go wrong with them. The first one holds up pretty well for an 8-bit RPG, and IV is one of the all-time great 16-bit RPGs IMO.

PS2, the one in your picture, is my favorite, but it can be tough for people to get into. 4 is by far the most accessible, and it is great. So I would say play 4, then if you liked it, play whichever one you want next.
But yeah, PSO is much different.

It's not at all. It's explorey as fuck. Never will you need to stop exploring new places to aimlessly grind before you can progress.

4 has the most polish and will be the easiest to get into if you are coming from more modern jrpgs.

They have nothing to do with PSO, it's a different IP and genre in everything but name. So, no, if you're looking for PSO don't play them. If you like traditional RPGs like Shining in the Darkness, Phantasy Star is perfect for you.

Does the Master System one has any depth to it or is it like 8bit Final Fantasy/Dragon Quest where there is barely any story/characters and the whole point is just to get stronger to beat the next big guy.

I daresay the original PSO has some actual Phantasy Star feel to it, lots of the monsters are right out of the old games.

It's a pretty simple revenge/justice regicide plot. The feel of adventure is all in the exploration, not in the very few cutscenes. PS4 is the only plot heavy one and still not what you'd call 'deep'. (It is very good though, has lots of character.)
