FF1-5 have a distinct look and graphic style that tells you that you are playing a Final Fantasy game. Starting with 6, they just started doing different stuff every game, until they settled on the sterile, washed out CGI look in 12 that they've been doing every since.

I really like the classic style, and think that 5 has the best graphics in the series, with excellent use of color and detail in the enemy sprites and tilesets. 3 and 4 also look great, too.

For me, a big part of the appeal in FF1 and a lot of older RPG's is the way they capture the "tabletop" aesthetic. Player characters have enough detail that you can recognize what role they play in a party, but still leave plenty of room for you to project personality onto. Like miniatures in a tabletop game!
