That would be more of a UI issue. The small text is meant for modern lcd setups.
Increasing the size of the text would fix it.

The rainbow effect probably means you're getting video from the Composite out.
Converting the HDMI to RGB (doesn't work with most North American CRTs) would also fix the clarity.

it has a unique display that would be challenging to emulate properly. you'd either need a VR headset or a 3D TV with polarized glasses to get anywhere close with modern hardware. maybe you could draw stereoscopic images on a standard display and cross your eyes. but anaglyphs are out because of the need for both eyes to see red.
