I recommend that one since most of the older ones are way less forgiving, but yeah, Grimrock can be slow since it's taking its time to get you used to the way it plays I guess? Also, Grimrock has some nice mods and there's even a remake of Dungeon Master for it.

the way I do it is every 4 squares represents a single in game square or step. Draw walls when you need to and just go from there. add whatever notes you want, tape more graph paper together if the dungeon is bigger than your single sheet. Before I threw them out I used dungeon maps with my stupidass notes on them as posters after I finished a game. Good conversation piece when friends came by since people would ask me what my weirdass notes were or why the hell I drew a random crab

there is still an issue with random battles at the infamous Arnica Road
But a) there is a mod that fixes that I believe b) yeah it's bad, but you can get through it even in vanilla wiz 8, it's just more running away than fighting until you reach lvl 14 or so and get cool gear and spells

I started with Ultima Underworld and it was fine desu, I'm not a huge retro PC gamer but it was a really neat experience. It's also an Inmersive Sim, so it's great if you're into that; making notes to learn the Lizardman language is fun.
ther than that, I think that Wizardry VI is not bad. It's not the easiest game in the world but if you're able to build a half-decent party you're bound to have a lot of fun.
