Man I remember that as a kid I had a CD-ROM full of SNES roms

It had several H-Games. Completely forgot about their name, but there was one that was a series of three. First one you got inside someone's house and sodomized a girl. Reminder that Gainax themselves published a strip Mahjong game for Windows featuring licensed characters. Yes, an actual 18+ game with nudity. For both female and male characters too, so if you want to see Gendo butt-naked, this is the game for you.
Problem is, it seems to be "lost media" in the sense that there is no download anywhere to be found. I've looked long and hard. Last I checked, there's a 5k yen copy on Amazon. Nothing on Mandarake.
In addition, they released 3 strip "Quiz" games for PC-98 and MSX before this. The 3rd one was purely Gunbuster, haven't tried the other two.

I recommend DESIRE (at least, Albert's route of it). It might be not the most ambitious Hiroyuki Kanno's game, BUT it happens to have GOD FUCKING DAMNED AWESOME English translation (at least, the one featured on tss.asenheim.org), that makes reading it (well, Albert's route) and just fucking around the island an absolute blast. Add to this the lovely art style (the initial, PC-98, version honestly looked like ass, but the Win98 remake - that is featured at asenheim - is such a joy to look at) and the kickass soundtrack (asenheim version even lets you turn on the original PC98 music recordings, instead of Windows version midis), and.

It's a pity I won't be able read it for the very first time ever again.

TokiMemo and its clones are about raising your player-character stats. It's part of what separates the genre from girl-raising games.
The girls don't have visible stats (though Tokimemo did give them a set of three values: (1) how attracted they are to you, (2) how much they like you/their opinion of you, (3) if they're feeling hurt and by how much, like e.g. if you skipped out on a date, which is more complex than the single affection-level stat most games use.)

But as for adult-rated stat-based games that aren't Tokimemo clones, there were a bunch of sex-training (調教) games where you teach girls to be obedient perverted sex addicts and there's a bunch of parameters for their sex skills and personality changes. Usually people wouldn't call those romance, though.

Despite kicking off a whole genre aimed at people wanting to fall in love with video game girls, the original Tokimemo felt more like a fun general-audience high school sim game rather than something aimed only at otaku.
