I've heard the Papyrus racing sims are the shit (especially Grand Prix Legends) but I've still never played them and I no longer have a wheel so I'm not sure if I should.

It takes some general inspiration from F-Zero but overall the series is its own beast and improves on a lot of problems I have with F-Zero. Most importantly it has craft that have a lot of weight and feel enjoyable to control and fantastic complex track designs. F-Zero's problem is that the tracks are extremely simplistic and bland, the craft feel like they are made out of cardboard and handling/mechanics that are either simplistic (original) or janky/glitchy (F-Zero X).
