Is MK3 different like SSFIIT is to vanilla SFII or just MK3 with DLC characters a la SFII Champions Edition?

I'm just wondering if it's worth picking up the original MK3 on SNES.

Johnny Cage's actor (and also Scorpion/Sub/etc) did promo for another arcade game, so he was fired. They couldn't find a replacement in time for the game.
This is why Cage was killed by Motaro before the events of the game.

Gameplay was refined a bit, despite some youtubers claims (I don't remember who they were) that umk3 was just mk3 with ninjas added. Just to give you an idea, in UMK3 you could use jump in punch to start a combo where as in mk3 you couldn't unless you timed it really well.

This is a misconception. Daniel Pesina already departed from Midway when he did that ad due to royalty disputes over the console ports.

Trilogy is the "perfect" version of MK3, so UMK3 is kinda like a stopgap. What Trilogy added to UMK3 was:
- Aggressor bar (full bar makes a character stronger and faster for a time)
- Brutality (was already a thing in UMK3 SNES)
- Added Baraka, Johnny Cage and Chameleon/Khameleon
- Added MK2 versions of Raiden, Jax and Kung Lao
- Added MK1 Kano
