Given that I grew up with late 90s isometric RPGs with easy mouse interfaces, what is a good option for a babby's first oldschool CRPG? The earliest I've gone is Arena and Daggerfall, which I find easy to play due to being single-character, real-time affairs. But blobbers with mapping scare me away like nothing else. Wat do?

Lands of Lore is an easy introduction to blobbers. It has an easy mouse interface and it auto-maps.
Then things like Eye of the Beholder or Dungeon Master are so well designed that you actually don't need a map. At least I could easily orient myself in those.

Al-Qadim is an easy introduction to CRPGs. You really don't have to care much about the stats. It's almost Zelda-like in its simplicity. Then again it's been over a decade since I last played it.
Dark Sun can be randomly hard due to combat in the beginning. You might end up restarting a few times if you're new to the game.

What software is good for crpg mapping? I'd love to break out grid paper and a pencil to try and replicate what a newbie would have experienced years ago but A:I have a terrible tremor that makes me terrible at drawing and B: I don't have the space to do it

Dungeon Master it's a great place to start. Go with that and then decide if it's a genre for you, then play some of the other recommended games.
I'll add Waxworks, and Ishar series. Or if you prefer a modern take on the genre try Legend of Grimrock, but it's not /vr/ material.

I myself had more problems with Lands of Lore (normal difficulty, the hard difficulty is even worse) and some unlucky situations in which enemies could kill you in just a few hits or the famous "THE ACID BURNED MY ARMOR!" forcing you to reload if you didn't want to run around naked or with a TORN SHIRT. It could get really messy real quick in the later levels, too and the real-time aspect made it rather hectic sometimes.

Realms of Arkania on the other hand is all turnbased and if you understood that you should take some basic shit with you (Shoes, blankets, Food) you were fine most of the time. Weapons and Armor weren't that expensive and could always be repaired by some smith. Fights were harder in the beginning but once you use bows you couldn't really loose. So I would actually say that RoA was an easy game, while LoL ranks from easy-hard (depending on the difficulty setting).

Recently been playing older CRPGs for the first time, trying to get deeper in the genre.

If you could get into Arena and thought it was alright, absolutely play Ultima Underworld. It's like Arena but actually amazing, the best dungeon crawl I have played. Blows Arena out of the water in most respects, even being 2 years older. Try to play with Roland MT-32/CM-32L audio if you can, it's far superior to any other option.

Betrayal at Krondor is a great one if you're looking for something more story focused. The biggest hurdle will be figuring out where to go next rather than any obscure systems or gratingly difficult combat.

Dark Sun: Shattered Lands is very good, a cross between the gold box D&D games and the Infinity Engine games. You'll feel right at home if you grew up with those late 90s isometric RPGs because it's very much a precursor to those games. Great intuitive interface with mouse control.
