No, a lot of them leave to do work on other shows as part of their internship. (Since being an AD is learning how the business works and is not an employee based position.) A lot of ADs do come back to help if they're in the area. Urakawa did this multiple times throughout the show after he 'graduated'.
Although you do have certain ones who have fallen off the face of the Earth like Takahashi Official story is she left to finish getting her teaching license, but something always seemed strange about how she left halfway through the season (she ended up only being in 4 episodes) and they ended up have the various staff being the helper support. Like Kibe with Musashi no Ken and Toni with Clock Tower.She did make a video for Arnio during the Lemmings 24 hour show, and later wrote him a letter when he challenged Wagen 2, because she was his helper for the first game. Or Tsuruoka, who did not have a good working relationship with a lot of the staff and they didn't, do, record, or air the segment where Arino is told Tsuruoka left the show. At least on camera, he and Arino had a good relationship. I've also learned about some games that are pretty obscure from a baka gaijin's perspective as a result of this show. In fact there's a general exoticness about it being a Japanese show.

With other episodes I've seen a lot of the time Arino reads things aloud, and his reading gets subbed, so I just read his subs rather than pausing to read both what he's said and the game's original text.

I only recently played through Dragon Quest (Warrior) a couple of months ago for the first time, while I was off work recovering from surgery, which was when I also started watching GCCX, so it'd be nice to tie the two together.
