Every old game I've ever bought on steam has been garbage, not surprised. Publishers can't be assed to port games at least in their original state, much less with improvements. Emulation is almost always the way to go.

SEGA Genesis/Mega Drive Classics is just an emulator package with a fancy frontend, so yes, it works just as well as any emulator does. Though I'm sure some hardcore emufag may be able to point out emulation flaws in the package.

No idea about Nights but it's not emulated, it's a port. Same deal with the games in the Dreamcast Collection.
