>characters can equip anything and learn any skill instead of being forced to use restrictive class roles
>instead of NPCs who send you on pointless fetch quests, sidequests are just random dungeons you stumble upon that contain assorted treasures and enemies
>I'm allowed to kill anyone or anything
>I can head straight for the final dungeon and end the game without having to do any plot-related events in-between (of course, this may necessitate tons of grinding, but it's still nice to have the freedom to sequence break to such a degree)

I like games where they actually show your characters sleeping when you go to an inn. Mystical Ninja is the only series I can think of right now that does this, you can even cheap out and get a shitty room.
