Majority of them are good, because of their popularity there is a lot of them so they offer a wide variety of gameplay options, from first person blobbers to beat em ups. It only depends on what you want, just a DnD flavor or true ruleset simulation.

Overall feel:
Gold Box games especially Pool of Radiance

Setting wise:
Planescape Torment

Rule and their implementation wise:
Temple of Elemental Evil
Knights of the Chalice

Nothing wrong with level caps. Learn to optimize with your stats and class choices. Although it's mostly magical equipment and the right spells that will carry you through the games. Sleep is just as exploitable in computer AD&D as it is in a textbook campaign.

BG and Icewind Dale imposed level caps too. I don't know if any of the re-releases patched that out, but they probably did.

I liked the NES adaptation of Pool of Radiance. Also, Temple of Elemental Evil is highly underrated, although it does need extensive patching due to technical issues.
