I wouldn't focus on a single game to beat at a time. I'd alternate between 2 or 3.
Example: SMW and Contra 3 maybe even add mario kart/f-zero/punchout to the mix.

SMW you'll progress no matter what. Contra 3 is the kind of game that if you start playing you can't let it go for very long or you'll get rusty. F-Zero and Mario Kart are the same case as contra but since they're racing they add variety.

I do not advise playing f-zero before mario kart because it will feel very slow.
I also recommend you space out the rpgs unless they're your thing.

If you haven't play them, hit select to sort by release date and work your way up from the oldest games. Then you can really feel how much of a mindfuck it was when Donkey Kong Country hit the scene.
Then install hakchi2 and put some real games on there. It's almost impossible to brick it since the original data is all stored in read-only memory.

anyway, I would suggest Mario. That was the game the system came with, and most people's first experience with their own system. The game is fantastic, and playing it can give you an idea of how much of a quantum leap the Snes was over the Nes. Then, play some of the later games to see how developers gained familiarity with the system and were able to push it even further.

Infact this is why I got it. I got a load of Raspberry Pis but this thing can literally run of a Routers USB port (meant for a network HDD) for a power supply. It can run off an external battery for HOURS. Hack it, put a load of games on, ESPECIALLY 2 player games.
It runs at 720p, meaning that it works on virtually all TVs with a HDMI port. It's portable. With two cheap extension cables the controllers are plenty long enough.
Its amazing to one minute scrap with your bro playing Tetris Attack, then co-op together on a beat 'em up or sidescrolling shooter.
(Plus it has Retroarch support, so you can be a heretic and put some megadrive games on there too. Like Dinosaurs for Hire)
I love the aesthetic of it. I love how easy it is to navigate the menu and find what you want to play. I really don't get the hate for it.

That $70 starter kit plus two $15 controllers is over $100
Not to mention that no emulator on the RBP3 will run as well as the Snes Mini.

both of those kirby games are great to play with friends. zelda and mario still hold up.

Secret of Mana is driven on nostalgia alone. For many, it was their first RPG. It was graphically superior to many other RPG's at the time especially compared to FFII (FFIV). Problem with the game comes down to the fact that it was half done with most content missing. It was originally designed for the SNES CD so after that was canned they scrapped a lot of shit because of cartridges's limited memory. There's a good reason why the second half of the game feels...void in many areas. Why Mana Palaces like Luna, Tree, and Wind have absolutely not content outside of the altar and entrance. Disappointing really. And yeah, the combat sucks, it's basically just spam dump magic on most bosses.

I actually prefer Secret of Evermore over Mana. Cleverly written, great score by Jeremy Soule (first soundtrack) and looked beautiful. Might've copied much of Mana's gameplay mechanics and was a tad short, but it made up withs flaw with the atmosphere.

from what i see of what's available on the SNES classic games list:

legend of zelda: a link to the past
donkey kong country
super mario world
the kirby games

will all hold up the best, gameplay-wise. i recommend starting out with a link to the past. that game is still great. super mario world is also still very playable.

i'm not a big fan of dkc or kirby, but they're pretty standard platformer games. dkc has decent controls.

oh, also mega man x. if i had the system, mmx, smw, and lttp would be the first ones i play. final fantasy 6 was my favorite nostalgia jrpg, but i've really lost any desire to play jrpgs. the gameplay just isn't that engaging for me anymore, and the stories aren't interesting enough to carry the gameplay. maybe as an 18 year old you'll enjoy it? not sure.
