For SP, i like DKR more, I always felt that CTR was too bloated with the gems, coins and relics, but i will say the dev ghosts challenges in CTR are better.
For Multiplayer, I'll just go with Mario Kart 64.

Diddy Kong Racing has better Singleplayer and lackluster Multiplayer.
Mario Kart 64 has better Multiplayer and lackluster Singleplayer.
Crash Team Racing is decent on both ends.

Does Time Trials count as single player content? IMO racing games really shine when you get good at them and try to beat your records (and is way easier than doing full game speedruns).
