Anyone knows how to get the high-poly versions of the cars (the ones shown in the settings menu before the race) in the regular races?

Unless there is a romhack out there or some way with emulation it can't be done to my knowledge. Don't know why you want want to as it would more than likely fuck with the framerate gotta remember F-Zero X was one of the few 60FPS N64 games and those lower poly race models were a compromise to get that.

Best game on the N64. And GX is easily in the top "modern" games, too bad about the unlocking stuff and lying stats. Not even the rubber banding in the grand prix in X and story mode in GX can deter my enjoyment from these.
Probably the best Nintendo series as a whole. I also own the SNES cart which is very good though not on the level of these sequels. The GBA ones are also cool.
