As far as I'm aware there aren't really any differences between the versions of 1, although I think the Jaguar version had a different version of the soundtrack and a breakout minigame. Assuming you aren't even thinking about the GBA port, so ignore it.
For 2, I believe Dreamcast, however I've heard people say PC. I haven't played that one so I can't say for certain. N64 is acceptable for the most part if you don't have access to the other two (I think). The PS2 version adds an open hub world instead of a map screen and messes with the artstyle a bit, wouldn't recommend for a first playthrough. Stay away from the PS1 version, it's missing a load of content (levels are gutted and there are only 800 lums instead of 1000). DS and 3DS are ports of the N64 and Dreamcast versions respectively as far as I'm aware, don't bother with them.

PC version can give some troubles regarding controls/graphics and doesn't run at full 60fps (even if that isn't too much of an issue since the game's animations are really choppy for 60fps).
The DS and 3DS are half-assed and should be avoided, hell, even the iOS port is less buggy than those ports.

I hate this game. I remember when it was released thinking it was too hard. Then, like 2 years ago, I saw it in a used game store for $4 and thought "Maybe I was just young and the game really isn't as tough as I remember." So I bought it and.... nope. Still hard as balls. Too hard as balls. It's a memory game. I hate "memorize me" games. Stupid French game developers.

Rayman 2 - PS2/DC, alternatively you could also play the PS1 version for the secret level at the end which shows how Rayman 2 was originally planned to look. But that's the only pro I can think of.

The 1 was slightly different across platforms. The portable version gave you up to 6 HP afaik and the PC version had some parts of levels remade to be easier, it also had music played randomly instead of per-level which kinda ruins the experience.

PS1/Saturn also has this, in a way; it plays the 'proper' track once through and then selects random 'atmospheric' tracks. That's just how the game was designed to compensate a lack of CD looping. The only versions that do loop are GBA, which is bad, and DSi, which is good but obviously not ideal.

Was anyone else really disappointed that when Rayman 2 rolled around, they had this entirely new canon that they were treating like it was already established? Like the original had Rayman, a villain simply named "Mr. Dark" which was hilarious, and this funny little story about "The Great Protoon."

Then in the second game you boot it up and Rayman is hanging out with this retard named Globox who's made out to be his lifelong pal and you're just sitting there like "Oh, yeah, Globox, right." And all the other elements were arbitrarily replaced by similar things, like Electoons are now "Teensies," Betilla the Fairy is now Ly the Fairy, and Mr. Dark is now General Grievous.

And I'm not saying they had to keep everything the same, but some continuity would have been nice, especially since nothing they replaced the old stuff with was at all superior aesthetically.

None of the Rayman games have continuity, Rayman 3 only has some nods to pevious games but nothing more (gba version doesn't count), and Origins/Legends are situated in another canon (compare Ray2 Polokus with the current one, or just look at Betilla).

Jaguar or Saturn. Saturn has nice loading screens effects and better music than the ps1 version. The Audio in the MS Dos version is random, that's why the saturn version is better.

Rayman 1: Saturn. PSX is a decent alternative. Jaguar is good but has shit music. Ignore the rest.

Rayman 2: Dreamcast, hands down. Even the developers admitted that is the definitive version. The other versions either add superfluous stuff (PS2's overworld), remove content, or butcher existing content.

Yeah it's disappointing. But the newer games are trying to fix plot holes.
I actually started on Rayman 2, then played 1 afterwards so it didn't bother me. But the difficulty spike was insane. I still prefer Rayman 1 since it has much better visuals and music, and more interesting scenery/levels/bosses. If they fixed the 3-4 cancerous places in Rayman 1 and removed the lazy invisible platform/cage spawn triggers it would be pretty much the perfect 2D platformer. But apparently they didn't even play test the game beyond the first few levels which is why some parts of the game are nightmarishly hard.
