My buddies and I sank an ungodly amount of time into Rival Turf; playing it through every single time so we could unlock the name customization feature in the second run and rename everyone with obscenities.

Run N Guns and Shmups slow down all the time on the SNES. Sure, there's the unusual shootemup like BioMetal that pushes the SNES to it's limits, but they're very few and very far in between.

Also, Genesis has Hard Coprs. SNES has the Shit tier Contra 3.

Doesn't make any of the games listed in here less interesting, and anyone curious about them can probably start playing any of them in less than 10 minutes.

Ghost Chaser is pretty close to perfecting how a solid Brawler should be made. Only problem is that players keep grabbing each other during co-op.

For something that hasn't been mentioned yet, Shounen Ninja Sasuke is worth messing around with. Seems like it was made by former Technos staff, so it's sort of like a less polished River City Ransom: same graphic style, same style of music, RPG elements, humor, etc.

I'd recommend putting shield block on a face button in the config for ease of use for fighter/dwarf/cleric. But you won't use those characters anyway because the wizard's offense is so OP.
