All my friends hate older consoles to the point they wont play any PS1 games or original Xbox games with me and those since they find them not as fun as newer stuff so pretty much whichever one has the best single player games I'm willing to give a try.

Thats a shame because Mario Tennis is probably one of the best multiplayer couch games in existence.
As for games that are single play(though you probably won't enjoy PD/007 aged controls so I'll exclude them)

Dragon Force was my fave but pretty much anything on http://vsrecommendedgames.wikia.com/wiki/Saturn shouldn't disappoint.

Definitely look into Rhea/Phoebe though. Should cost around a hundred bucks but that pales in comparison to what the physical media would cost.

I'm assuming you don't have much money or you would have bought all of them.

I reccomend the Dreamcast, Sega CD, and 3DO (in that order) because they will immediately accept burned discs without any modding needed.

If you are into handhelds get the DS because the R4 card that lets you load the entire ROMset is like $40.

If you are sensitive to cooling fan noise then avoid the Xbox 360, Dreamcast and Gamebuce.

Saturn is worth it if you install Pseudo Saturn to an AR (vaguely easy, but you do need to open the machine up to tape the lid sensor down so you can do the swap trick -- you only need to do one swap, ignore the first swap on any guide that tells you to do one to read the TOC for music to work, it doesn't matter)
DC is fairly worth it, assuming you know what games you want to burn beforehand.

tape your Action Replay down into place so that it's definitely read by the Pseudo Saturn Kai installer (it's got safeguards in place to prevent you from bricking your cart, which are a tad overzealous)

loads of the top shit on Saturn are arcade ports you can play elsewhere and the 3D ports are kind of obsolete at this point, but they're still playable (Virtual On, Virtua Fighter 2, Sega Rally)
there's a handful of exclusives that are great (every Panzer Dragoon, Psychic Killer Taromaru, Radiant Silvergun, NiGHTS, Bulk Slash, Gungriffon) and some that are kind of decent (Clockwork Knight, F1 Challenge, Ninpen Manmaru)
and then there's weird shit that's oddly better on Saturn than elsewhere (original Wipeout handles loads better, Hyper Duel has an arrange mode you can't get in MAME, you can argue Thunder Force 5 looks better on Saturn, but I had more slowdown issues vs on PS1)

you'll want a save cartridge to back up your saves from the mercy of the battery/hold more saves (unfortunately, this involves cartridge and file shuffling -- and don't use the Action Replay's save feature since it writes directly to the flash chip, which only supports a fairly small amount of writes)
get a JP one (HSS-0138) because the US one (80101) is expensive as fuck
