Alex Kidd in Miracle World
Alex Kidd in Shinobi World ( we need romhacks with more levels for this one)
Golvellius: Valley of Doom
Land of Illusion starring Mickey Mouse (one of THE BEST 8-bit games)
Castle of Illusion starring Mickey Mouse
Ninja Gaiden (easier than the NES games but fun)
Sonic the Hedgehog (different enough from the genesis version)

These are all very good games that everyone should have played at least once. There are still many more SMS games that are worthwhile but I agree that they may not be as enjoyable to people who never had the console. Master System also had some rad ports.

Ultima IV: Quest of the Avatar (best version of IV period.)
Bubble Bobble (veeery good port)
Ghostbusters (awesome genre mix. NES version was trash too.)

I tend to map dungeons for three reasons:

Speed. I want to see the other content of a game rather than get lost in the same place for hours/days (fucking Climatrol).
Thoroughness. When you complete every corner on paper you also find every important spot, just stumbling through a labyrinth caused me to miss plot important items in phantasy star.
Satisfaction. That's subjective, but it feels satisfying to me to have a whole dungeon map I created in my hands, it feels like I conquered the place.
