There was some sort of interview to the Double Dare or Hidden Temple host. And even on that show they were pretty harsh to the kids in the sense that they'd tire them out intentionally after giving them lots of sugar before they would do challenges aired late that evening. So I wouldn't put it past them for getting some 'slow' kids to be on Nick Arcade.

I'd always heard that for Hidden Temple at least they would film something like 5 episodes at once. In the morning they'd start by filming all the moat segments for all the episodes. Then once those were done they'd do the question round for all the episodes, then all the temple games, then after that all the temple runs.

So by the time they were filming the temple on some filming days it could be as late as midnight.

According to this interview I found it was even worse. Sometimes something in the temple would break down and they'd have to do a reshoot. So the kid would have run the temple multiple times, tiring them out even more. And every time having to get raped by temple guards again.

Not really, they had a contracted paint crew that consistently painted new events since the studios were constantly changing, they probably didn't give it a second thought.

Which makes it all the more heartbreaking.
Inside, they still have a ton of Nickelodeon stuff on the walls though. Lots of logos still linger, a lot of the old equipment are still untouched in the production rooms, and there's still a huge Ren & Stimpy wall painting in the break room.

OCD doesn't necessarily mean 'clean, spotless'. It can also mean having things in their place, in order. Cleanliness is often hand-in-hand with it but not necessarily. OCD is more about 'repetitive motions or urges you can't stop' and not 'is a neat freak'.

For example, I get messy in the yard whilst planting my garden in the spring, and then I go inside and wash my hands. Then I go put the tools away and come inside. Then I go back outside and check that all the tools are put away again. They have to be in their places in the racks and everything has to be organized perfectly, but it doesn't have to be sterile. They do have to be checked every time I go in or out of the door, though.
