CV1 is hard, but how hard it is has been blown out of proportion. Like, the hallway before Death isn't that hard. It looks hard, it's daunting for sure, but at that point in the game you should be able to cartwheel around Medusas as easy as breathing. You should also know how to reliably beat Knights by this point. The only real challenge in the hallway is figuring out how much to move forward between attacks. Though I could see how it'd be harder if you never practiced jump attacks.

Medusa heads are the only real annoyance.
Saw some lets player a year or so back fail terribly at it and so I just brought up the game in a browser I think.
Hadn't played in over a decade.
In general bishops are the most commonly challenging enemy in retro games.
If you can move diagonally than you present at least some difficulty.

Yeah Castlevanias not the hardest game on the planet. However I think it's a good introduction to retro difficulty given how many elements that define Castlevania have become tropes. The knockback, clunky controls, items and enemies all blend together perfectly to show a newer player what these kinda old platformers are like.

I think a lot of MM1's difficulty comes from strange design quirks that weren't as present in the other games, and once you adjust there's harder games out there.

No e-tanks or upgrades besides the magnet, a few levels demanding you have a weapon fueled to progress, spikes bypassing mercy frames, weird shit like that can throw you off if you started with newer games.
