For a newcomer to the series, which is the best version of Resident Evil 1 to start with, the PlayStation original, the director's cut, or REmake?

What are you looking for?
Just to play the game, or to experience the series chronologically?
If just to play the game, go REmake. If you want to be able to appreciate 2 and 3 as they are now, I'd start with the original or director's cut (just not the DUALSHOCK ver.)
I believe a remake of 2 and possible 3 are in the works, although i have no idea what changes might be made or if they're even going to arrive.

Resident Evil 1 was a innovative, important game for it's time, but it's not very good.

Play REmake instead. Best survival horror game imo, remade by the original developers, very well done.

The remake is almost an entirely new game and is better appreciated if you've played the original anyway.

Play the original game mode in Director's Cut (not the Dualshock one), this will make sure you'll have auto aiming.

The PAL Dualshock uses the original music, but the NTSC versions use new ones which are (overall) good to play once for novelty factor, but which are generally considered worse.

If you want a colorful game, horrible voice acting and less scary experience, go for the Original/Director's Cut.
If you want a spoopier experience, better graphics, additional content that expand the storyline (a.k.a retcons), go for the REmake.
I recommend the HD remaster, for more apparent Jill's Breast physics. I can't even play that one because of that, I end up checking my Jill folder instead of playing.

Yeah it looks better. Highres, remade lighting.

It also lets you play in widescreen and with camera centric controls. Avoid both. Widescreen is a zoom-in and you actually see less of the screen.
Camera centric controls are a mess and are a cheat, because it allows you to perform moves which the game was not designed with in mind. It would be like playing SMB3 with double jumping or something.

I prefer the original over REmake. I just like the old PS1 graphics more, and the voice acting is what it is.

The game itself is just as good as REmake. If you're a grafix whore, play the latter. If not, give the original game a try first, as it will make you appreciate the REmake more.

DS version is great (if you play in classic mode, DS modes suck ass) but it's not quite the original game considering that all 3D models were re-done, zombies have improved AI and the characters new moves.
It may be good for newcomers though, it'll feel less "dated" to people who think games age.

Not exactly everything, no. For instance there is the way RE handles the inventory/box, it's more action oriented, and there is also the way it handles story with the story branching depending on the player's actions which is something that influenced not only survival horror, etc etc

And it's Resident Evil which came up with the title 'survival horror' and established it as a genre. AitD was only 'survival horror' thanks to RE, before that it was 'action-adventure'.
