What are some comfy Famicom/Disk System games that we didn't get in the west? Preferably ones that don't require too much knowledge of Japanese.

I dunno if I'd call it comfy for most people, but the original Super Mario Bros 2 always gives me this weird satisfaction, like I'm playing a game I'd been deprived of.

Similarly, I like playing the original Doki Doki Panic just for the weird feeling of playing something my mind recognizes as a Mario game but isn't.

What the hell do you mean by comfy? If you want a fun game that doesn't require Japanese, look up Ai Senshi Nicol. It reminds me a bit of Star Tropics.
