I'm aways looking for games with unique mechanics that make them stand-out from the crowd.
I'll post my favorites and tell what I think about them.

Gimmick! is a cute and colorful NES platformer with impressive physics for it's time. A girl gain him on her birthday (he's a toy), her other toys get jealous and kidnap her to another world. As Gimmick you have to rescue her and fight the other toys that are the game bosses.
You can charge and throw a star that will bounce around and hit enemies. You can use the star as a platform to get to secret areas. The stand-out feature of this game, it's physics engine is it's main problem: you have a lot of momentum and the game feels slippery, when jumping on small platforms you'll have to press the opposite direction mid-air or you will slip right through it. Very hard game but very fun once you master it's main mechanic.

Drill Dozer is a Game Boy Advance platformer. You play as Jill and the Drill Dozer, a robot with drills for hands. You use the shoulder buttons to spin your drill left or right, the spinning direction matters to go through some obstacles.
The game have water and flying levels, which add variety. I hate the flying level though, it's a nightmare to control. The bosses are very creative but some are kinda easy.
The game isn't very difficult but there's secret stages you can buy with bits and they're much more challenging. It has many collectibles and searching for them is fun.
One of my favorites, never got me bored and I still replay some levels once in a while.

On Umihara Kawase you play as a girl, i think she's called Yumi, and have to get to the door of each level, called fields here.
To do that you will have to use your fishing line to climb through the levels. The line is very elastic and you can get momentum to throw yourself very far. Mastering the impressive game physics and just moving around is great fun.
The bosses though, they're awful. Their patterns take long time, starting easy but get gradually difficult. There's nothing you can do to speed these fights and if you die you have to do it all over.
The game have many routes you can go through and some are so short you can beat the game in a couple minutes, others are much longer though. There's a timer but you'll be given enough time to complete each field. You can save replays too and it's my favorite game for speedrunning.

The Ecco games are an obvious choice if you haven't played them. There's really nothing else like them at all out there. It's tough to even really say what genre the games are.

Tempest is a classic arcade shooter with a pretty interesting design and is a fuck load of fun.

Metal Walker is a JRPG with a sort of pinball/pool bassed combat system. Weird but decent.

Also, not quite retro, but Zone of Enders: Fist of Mars on GBA is an awesome little strategy RPG with a very fun combat system where you have to either get your reticle on the enemy to hit them, or avoid theirs. Highly recommended if you're into that kind of thing.

Eventually it will be, we just have to wait. GBA games tend to look retro because of the graphical limitations of the system, but design wise a lot of the games are very clearly from 5th gen. Probably in about five years the scale here will slide to include the next generation up.

He is a character who attacks by shooting his limbs (did it 2 years before Rayman)
He can run out of limbs if he shoots the 4 of them quickly, and that changes they way he controls (bounces around), and the physics
Some levels force you to lose your limbs for a while in order to advance through the level
