For Ultima, the first game is surprisingly accessible, but I'd recommend starting with 4.

Accessibility is a huge problem with these games, even the games in your post are easier to play than others before it. For that, I'd recommend Daggerfall and Ultima Underworld because they're relatively easy to get into.

Rogue is an obvious mention too, even if you can't beat it, but Dungeon Hack kicks supreme ass. It's a rogue version of Eye of the Beholder (another great game too, just don't play it on SNES) which plays great.

If you're up for a bit of frustration, Wasteland can't be ignored. Get the recent Steam/GoG versions because they have the textbook paragraphs built in.

Some people consider Strife an RPG.

It's a FPS made with the Doom engine, but it has NPCs, inventory, a Hexen-hub-style map which changes as the story advances, a kickass story, and multiple endings.

The source to the original game was lost, but the Doom community have reverse engineered it. You can play with the original files in DOSBox, with ZDoom, with Chocolate Strife, or there is a modern commercial version called The Original Strife which you can buy on Steam.

Great game, I love it and have finished it several times. If you're into FPS RPGs then give it a go.

I really liked a lot of Amiga shoot'em ups like Hybris, Battle Squadron, Agony, Project-X, Walker, Xenon 2, Blood Money, Awesome...

There's a bunch more interesting ones I haven't even tried, and some really weird games like in pic.
