Minus this game and it's sequel and that Sonic compilation, what are good platformers for the Sega Saturn?

It seems to be filled mostly with racing and fighting games as its best titles. I have no interest in either.

Keio Flying Squadron 2 and Tempo are both pretty good 2D platformers. Tempo is super expensive though.

Burning Rangers is a great 3D platformer although it takes a bit of getting used to.

Castlevania SOTN, Keio Flying Squadron 2, Skeleton Warriors, Lost Vikings 2, Bug, Bug Too, Silhouette Mirage, Astal, Super Tempo, Pandemonium... and I'm sure I'm missing some others, including at least one obscure Japanese 2d platformer. Not all of these are "good" though.

2d platform games were not that interesting anymore, everybody tried doing 3d in that era.

Not many 3d platformers existed on the Saturn either, though. The ones from the top of my head are Tomb Raider, Burning Rangers, Ninpen Manmaru, and Croc. Maybe you can consider the 3d arena in Sonic World as such but it was just an open world where you could reach the extras. Nights allowed you to roam freely in 3d but the game wasn't about that.

There's Earthworm Jim 2. The controls have a few issues compared to the SNES/MD version, but the Saturn version is the best looking one (better than the PS1 version)

That game is insane and the Saturn version is a big step back from the SNES version. But the music is WAY better on the Saturn.

This reminds me that I still need to pick that game up.
