What are some must play Japanese games?

You mean games that were EXCLUSIVE to japan? Because there are literally too many to mention on the SNES and quite a few on the NES as well.

Policenauts if you like Snatcher and Hideo Kojima.

OP, make clear what kind of japanese games you mean.

Since you posted Goemon, I'm assuming you mean games with japanese-centric themes?

Yeah, exclusives. Though I guess western releases can count too

Fire Emblem for me is the definitive SRPG series. Try out Seisen no Keifu on SNES.

The Super Famicom Goemon games are great, especially 2.
3 is almost impossible without knowing Japanese though.

Alright. If you want exclusives then here's just a small number that I'd consider "must play" caliber.

Ganbare Goemon 2 (sequel to Legend of the Mystical Ninja)
Ganbare Goemon 4 (another sequel to LotMN)
Fire Emblem (any of the SNES ones can be played with translation patches, there's a couple for NES as well that have also been translated)
Final Fantasy 3 (NES)
Final Fantasy 5 (SNES)
Clock Tower (SNES)
Tactics Ogre (SNES, though the PS1 version came out in America and it's literally identical)
Parodius da! (SNES)
Gokoujou Parodius (SNES)
Jikkyou Oshaberi Parodius (SNES)
Sexy Parodius (Saturn)
Pop'n Twinbee (SNES)
Detanna Twinbee (TG-16)
Marchen Adventures - Cotton 100% (SNES)
Panorama Cotton (Genesis)
Rainbow Cotton (Dreamcast)
Battle Pinball (SNES)
Alien Crush (TG-16)
Jaki Crush (SNES)
Super Pinball 2 (SNES)
Sweet Home (NES)
Famicom Tantei Club Part 2 (SNES)
Super Fire Pro Wrestling Special (SNES)
Super Fire Pro Wrestling Queen's Special (SNES)
Super Fire Pro Wrestling X Premium (SNES)
Jikkyou Power Pro Wrestling '96 Max Voltage (SNES)
Gekkitou Burning Pro Wrestling (SNES)
Nekketsu Koukou Dodge Ball Bu (japanese version of Super Dodge Ball for NES, plays faster and has 4-player Bean Ball Mode but is otherwise the same)
Nekketsu Street Basket - Ganbare Dunk Heroes (NES)
Nekketsu Kakutou Densetsu (NES)
Ike! Ike! Nekketsu Hockey Bu (NES)
Shin Nekketsu Kouha - Kunio Tachi-no Banka (SNES)
Shodai Nekketsu Kouha Kunio-kun (SNES)
Super Bomberman 3 (SNES)
Super Bomberman 4 (SNES)
Super Bomberman 5 (SNES)
Bomberman B-Daman (SNES)
Shin Kidou Senshi Gundam W - Endless Duel (SNES, seriously one of the best fighters of all time)
Magical Drop (SNES)
Magical Drop 2 (Arcade, was also ported to SNES, plus there's a MD3 but I don't know if it was released in America or not)
Tsuyoshi Shikkari Shinasai Taisen Puzzle-dama (SNES)
Umihara Kawase (SNES)
Denjin Makai (Arcade, ported to SNES as Ghost Chaser Densei with half the playable characters removed)
