I want to give this series a go, but I am not sure where to begin; I have heard that IV is a good choice and that Akalabeth and the first three games are largely irrelevant to the plot of later two trilogies.Also, how exactly does the save import feature work?

You copy your save data (party.sav for 4, saved.gam for 5) onto another drive and use the import function from the sequel. In DOSbox you can simply mount the directory as a drive.
For the conversion from 4 to 5 your stats are halved and your XP is reduced to one tenth. For 6 your stats stay the same but your XP are again reduced to one tenth. This only affects your avatar, the other companions aren't transferred.

The first games aren't important for the plot but they shouldn't hurt either. 1 is quite short and may be useful to get a grasp of shortcut based controls. They're also interesting from a historical standpoint.

yes, 4 is usually recommended and also where I started. It is where the whole arc with the avatar and the virtue system started, which makes it really interesting even if is of course a bit archaic in some ways. What bothered me the most was the fucking slow combat with one move at a time, it really made fighting a bit tedious.

U4 is where the whole Avatar story begins. The earlier episodes were more or less the typical beef up your character and go kill the big bad wizard game. Not that they're not fun to play, but you won't be truly missing anything by starting at 4.

The gameplay in 7 basically consists of dragging items around and talking with characters by selecting keywords. Combat is automatic and chaotic.
