Fantasy Zone is awesome, and I'm so glad SEGA of America's localizing not just the first's, but the remake of the second game's respective 3D Classics. They play like Defender but with greater customization of your playthroughs, gaudy colors and mid-Atlantic music playing most of the time, and more challenge than one would expect.

Twin Bee was the first shmup I really liked as a kid, it was kind of my introduction to the genre (along with Galaga, Star Force and others, but Twin Bee was my favorite).
Really good series, the platformer games are also pretty nice, I never played the RPGs though.

Fantasy Zone, Parodius, Air Zon series are also amazing.

Also Magical Chase on the TurboGrafx-16/PC-Engine. Got music that's pretty much the antithesis to the sugary sweet graphics and is overall pretty rocking.
