What model of Genesis should I get? Does it matter?

If you're not planning to get the CD unit get a Model 1 High Definition.

If you are, get a Model 2 and mod it with CCAM.

I'm speaking strictly from an aesthetics point of view though.

You should get one that works.

Yes it matters.
There are some differences in sound and video quality. Opionions differ, but here are some facts:
-composite on the Model 1 is really bad, RGB and S-video are good
-Model 1 has stereo output via 3.5mm jack, but only mono output on the DIN connector
-Model 2 has worse audio because the YM2612 is integrated into the VDP and they cut some corners in the output circuitry

If you have a TV with RGB input I would get the model 1.

If you want to be able to listen to your games via headphones with some of the highest quality sound around. You get the model 1.

If you want best picture quality. You get the model 3.

You get the model 2 if you want shit lie the CD and 32 bit video game console addon.

Don't get the one programmed with a bunch of games on it. The sound quality is terrible.

Depends if you're just casually looking for one or looking to collect big

If you're super-serious for range then a Sega CDX will give you the option of a built-in Sega CD and its shell accomodates the Sega 32X and Power Base Converter for Master System games (the X-eye will accomodate a 32X but not a Power Base Converter, plus it's bigger)
