When you hit a zombie with a sword, you get this goopy, fleshy, disgusting feeling that leaves a pit in your stomach. The zombie ignores you and keeps coming.
When you hit a skeleton with a sword, you get that metal on bone sound and sparks fly and something loudly breaks. The skeleton collapses and you're free to smack the next skeleton.

Zombies can be done well if they are more than just "hur dur, infected humans".

Usually they're only cool or done well if they're in a fantasy/scifi setting since you can turn a zombie into something much more interesting and intimidating.

Ghouls come to mind, for the Fallout series.
