Vagrant Story is pretty much the game for this. The graphics are gorgeous, the game came out at the end of the PS's life (2000) so it feels like the devs had a real solid understanding of their limitations and how to get the most out of them. Which, I think, is what most low-poly artists strive for.

Anyway there was a thread a few days ago where someone just dumped 50 screenshots of the game but I think it died. I'll post a few I took when I beat the game a few weeks ago. I wish I had taken more, especially of the enemies.

Yeah man, pick it up if you can find a copy. It can be a frustrating game but I think it's well worth it. I spent a while looking at all the environments and taking in the atmosphere.

You obviously haven't seriously played Vagrant Story. The devs clearly thought they could do way more than what they ended up being able to do. What it does is show exactly how far the PSX can be pushed before it just won't go any further.

RE2 certainly counts. The character models are very good. Very detailed too.

They really shine in the DC or Windows ports, as they are at a higher resolution. Strangely, the character models in RE3 are not that impressive.

Most of the good looking 3D games happened to be on the PS1 and even Saturn. The PS1 has boatloads of games and developers, and the developers have developed dozens, if not hundreds, of games for the PS1 due to it being easier to program and actually being popular. The Saturn was a little trickier, namely because it didn't have that many 3D games.

I seriously doubt anything on the N64 actually looks good with it's shitty textures and Astigma-vision. I swear, I felt like I was going blind playing the N64.

Mega Man Legends' color shading and bright palette goes well with the blocky Lego look of the game world. I'd say it holds up better than most other polygonal console titles from that era.

i always like the low poly feet on PS1 spyro titles, i think most characters had about 6 sides ontheir feet, i dont remember the rest of the game(s) looking low poly but i guess they are by modern standards

For all its deep dark story, Final Fantasy VII looks like fucking playmobil. Especially with the compilation and fandom it's hard to take this game seriously anymore - and the aged graphics don't help.

you fools must be crazy. not only is is low poly, but the devs actually used multiple layers of low poly to let you take apart the boss however you deemed fit. do it fast, or take your time. this boss in particular was my favourite because you can blow off his arms (arm armor), legs (Leg armor) and back as long as you leave his head intact.

I wish Katamari Damacy counted because that's the first thing that came to mind, and I think they did a fantastic job in that game.
In "retro" terms, I submit 40 Winks, Spyro, Mega Man Legends 2, and Final Fantasy 8 even though it's probably in my bottom 5 main Final Fantasy games. I grew up with Playstation, so I can't say much about Saturn, N64, Dreamcast or Pre-2000's PC.
