Shortest answer? Because they display the interlaced, standard definition signals in native mode. HDTVs have to convert them, which takes a certain number of milliseconds and still doesn't perfectly represent it.

Only way I know of to get perfect motion quality (no sample-and-hold blur) with zero added latency on the original hardware (more easily accomplished if you're emulating). This is theoretically achievable with other display technologies but seeing as it would look worse for most other use cases (TV, movies etc) there's no market for it and AFAIK it doesn't exist.

Other than that there is nothing really wrong with playing on an HDTV, unless you're like me and can't stand ghosting or really bad blurring.

Other solutions are upscalers, which are expensive or Emulation/Virtual Console.

My 32' hdtv serves me just fine for PSX, PS2, N64 and SNES. I play rpgs pretty much exclusively. However, I wish I could comfortably fit a crt in my game room for the NES if nothing else. It doesn't look good at all. Been looking for something small like a 13" to fit on a shelf.

CRT left, HDTV right.

Image is from very close to the screen. CRT looks a little fuzze up close, but that would be like playing it with your nose to the screen. When you sit back a bit at a normal viewing distance it looks pretty clear. The slight blur is actually a good thing.

Right is HDTV, and it's "cleaner" in that it's sharp, but it is scaled by something like x4 through nearest neighbor giving it that jaggy look. That's bad.

A Q for U: I remember when I first emulated aLttP after selling off my SNES and my 200 games back in like... 1999 or 2000 or so, I found it odd that Link's hair was a different colour than I remember. I've not played a hard-copy of the game in years and every rom of it I've ever found seems to have his hair different than I recall. Pink or purple or magenta or something.
Was the sprite on actual hardware that actual colour and I'm misremembering it as dirty blonde or was it actually dirty blonde and some other thing is rendering it purple/pink/magenta/whatever?

The game was made to be played on a CRT TV and thus was designed with that in mind. details would be sized so that they'd show up properly even with blurring, dithering would be used to effectively create extra colours beyond the console's limit thanks to blurring that show up clearly as two colours in a clean HD image. The CRT was the intended medium, and its strengths and weaknesses were taken into account.
