A case could be made for NES (since the common RGB mods turn the games into technicolor nightmares) and the Genesis, Saturn, and PS1 (which use dithering heavily), but for SNES and N64, there's literally no reason to use composite.

Dithering does lose some effectiveness in RGB, but the benefits definitely make up for it. As for the colors, a proper RGB mod (NESRGB board) allows you to use regular NES colors instead of emulator style or PC 10 colors.

The color difference is due to the NES PPU outputting NTSC colors that will appear differently depending on the decoder hardware used by the TV, while the Playchoice-10 PPU used for RGB out for NES outputs colors in a more straightforward manner so they're consistent, but they are much more vibrant than the NTSC palette.

For other systems, RGB should just be an improvement in clarity with only minor difference in color.

Also, NES games over RGB is better accomplished with emulation since you can use a palette that's closer to what the NTSC colors look like on your TV. Nestopia's "canonical" YUV palette looks very close to my actual NES composite output.

If you use the SCART-to-YUV transcoder to convert your RGB output to Component you can manually tweak the color intensities to your liking, too. It's a shame it doesn't have multiple presets but I'm sure digital pots would push the price up quite a bit.

The obviously drew things on high quality RGB monitors, and intended things to be viewed this way. Look at the typewriter in this Chrono Trigger screenshot. The single pixel detail isn't dithering, it's representing individual keys. If you blurred it the object would be unrecognizable. Even the Sonic waterfalls prove that the graphics should be sharp, because the "dithering" is in fact vertical lines representing individual streams of falling water.

Yeah you can just use two sets of "composite" cables, which are just cables with RCA ends same as "component" cables. You only need a blue marker to change the colors to be correct, too because yellow + blue = green. I usually put a green ring around the red cable that I use for the Pr channel to differentiate it from the Right audio channel though. If you run your video cables near power cables you may want decent shielded cables for the video though.

I mean if you scribble blue marker over the white plug on a Y-R-W set of RCA cables you get blue and if you scribble the same blue marker over the yellow plug you get green.

So two sets of Y-R-W with blue marker on one Y and one W set of plugs gets you R-W-R-G-B component cable colors plus an extra yellow that can be used to carry composite and/or sync
