Unless you're collecting, would there be any point to owning the original games if they've been re-released in superior versions? Mortal Kombat II on 32X is the best home console port, but Mortal Kombat Arcade Kollection on PS3/360 trumps it due to it being a 100% arcade perfect emulation.

And that's just one example. Like, why would you own Super Mario Bros. 1-3 on NES when the versions on Super Mario All-Stars are superior?

Different or more advanced does not necessarily mean superior.

I prefer the 8-bit music and colours for SMB3, for instance. And isn't the Lost Levels a bit different on NES? Thought for sure they changed some things. I know they did on SMB1, they removed a couple glitches I actually found useful. I also don't particularly like the stupid Bowser posters found all over the castles.

the only game on All Stars that is superior to it's NES counterpart is SMB2(USA).

The brick physics change is more subtle than "being pulled up". From memory, what happens is that instead of being pulled up, you just don't stop the jumping motion - the brick above you is pushed up as you hit it, so you have "room" to jump higher. So, all you have to do is to stop holding jump when you hit the brick.

It is a minor inconvenience at worst.

Every game or port plays a bit differently and has more or less features involved.

I enjoy collecting but for me the nostalgia is playing the genesis version of MK2, so I would buy it for that reason and to collect. I would than buy a 32x copy because I've never played it.

Luckily there's no good reason not to just play the PC version. With the possible exception of Doom 64 all the console versions are inferior, and none of them have as amazing a modding community as on PC.
