So I was wondering why the music of the 16 bit area is so memorable and epic in many cases, especially the SNES music. With 8 sounds simultaneously the music is always quite simple, its MIDI-quality so technically spoken, you can't say its music of high quality. But I'm pretty sure, everybody can sum the "Light World" Theme of "Legend of Zelda", the "Corneria Theme" of Star Fox, the Boss theme of "Secret of Mana" and even the tunes of more unknown games Like "PLOK" stuck in your head for ages and gives you goosebumps.
I won't say it's just nostalgia. I've played Chrono Trigger for the first time recently and holy hell, Frogs Theme gives me the chills and is memorable as fuck.

Yeah, so why seems the music of the 16-bit era be so much "more" than the video game music nowadays?

Any suggestions?

Not everything back in the days was pop music. Mystic Quest Legend had a hardrock soundtrack and you can't say that most of the sad themes in the RPGs like Terranigma, Illusion of Gaia or Chrono Trigger are "poppy". The function was the same as with the cinema music: underlining the mood.

And besides, some movies have a great memorable soundtrack, like LoTR, Pirates of the Carribean or -of course - Star Wars

You got roughly a minute to create a tune that had to be looped for however long the level played, so it had to be something that players wouldn't mind hearing over and over.

Orchestral music all tends to just fade into the background, that's kind of its purpose. You can still have music that stands out, though. Pretty sure most gamers could recognize, say, One Winged Angel.

Orchestrated music can be looped and have hooks too. It's usually better when it at least develops more impactful themes that way.

If I were to list off my favorite 10 or 15 game soundtracks, I honestly don't think any of them would be from 16-bit, or even 8-bit games, even though a large chunk of my favorite games are 16-bit.
...unless you count Sonic CD, which I wouldn't, since the arguments for 16-bit being better is usually all about creativity within strict limitations, or not being capable of generic orchestral sound, neither of which applies to CD audio.

Maybe this is it:
The brain likes stuff it's familiar with more than stuff it isn't, but new material is obviously needed to keep interest.
16-bit music has both of these qualities.
As different as the music in games like Star Fox and Chrono Trigger, or Sonic and Castlevania: Bloodlines might be, you can still usually tell it's the same console producing that different music. It has the same basic sound, because all the music is played using the same basic tools.
With immense storage space for actual audio files, all that shit flies right out the window. People can make whatever the fuck they want using whatever tools they want and all you hear is a recording of the finished product so nothing really sounds like anything else. That little bit of familiarity is gone so it's harder to immediately appreciate.

Playstation definitely has a better sound chip than the SNES. And you can pretty easily compare FF7's music to 6 in terms of sound quality. 7's, while not the most pleasant form of midi, is still better quality than 6's.

The reason the Playstation often has worse music than the PCE-CD or the Sega CD is because those games were tiny and they could fill the whole CD with glorious redbook audio.

I love the chip-generated stuff from the 8/16-bit era, but I also have a soft spot for the Redbook soundtracks on the Sega CD and Turbografx/PCE-CD. That style of music they did for them is quite rare on modern consoles these days.
