Is there a way that I can play vs. or co-op NES games online with friends? I'd love to play some tecmo bowl or something with a buddy in another state.

You need an emulator with netplay. NEStopia gets the job done for me.

Whatever you use, make sure you're using the same emulator, same version of the ROM, etc

That's awesome! I had no idea. Is there a way that I can play against people I don't know? What's like the best online emulator experience out there, not necessarily NES related? Is there a way to play Super Mario Kart online against others I don't know at any time?

I played Contra with a buddy not too long ago through RetroArch. Not only was it a great experience, the other guy reported no noticeable lag on his end due to the rollback mechanic. Occasionally our player characters would appear to warp into their correct position, however.
