Why don't games do this anymore?
I feel this type of box art can be very evocative, because you're looking through a photograph and into an actual, real-world space.
It doesn't matter how wacky the sculptures are, the fact that they and the space around them are actually real makes this type of box art feel tangible, and instantly pulls you into this other world.

You think of most video games themselves as tangible, to some extent. They present this other reality and it's their job to pull you into it - no matter how wacky it is.

I think it's actually a mix of the two because the eyes are clearly drawn on but I don't know if that is because it was drawn on the clay or because it was simply an illustration addition.
While the blue red eyed guy is clearly drawn but the bugs and flowers look like clay.

Do I even need to answer this? Isn't it kind of obvious? 3DCG has evolved to the point where you can achieve a 90% similar look with software alone and devs think it's not worth it to build physical models even if they have their own quaint charm.
They rarely do fun and unique things if the standard way of doing things is cheaper and faster.

But they AREN'T doing that either. The soulless advertising fucks just don't want to do this style at all, period. It's that simple.

Trog was an arcade game that featured "PLAYmation", using digitised claymation for the in-game visuals.
Although the actual arcade cabinet and print art seems to feature more illustrations than photographed clay sculptures.

The game would be ported to DOS, and also to NES by a company called Visual Concepts, who'd go on to make ClayFighter and Claymates on SNES.
