Pokemon is better than most modern RPGs in the sense that it never forces you to play "the right way" if you don't want to. You can go through any Pokemon game from start to finish using nothing but not very effective moves if you want to, and there are no rules for party composition besides "do what you want to do."
Pokemon is simple and has gotten pretty shitty in recent years, but that shitty simplicity is still better at its core than games that try to force you to play "the right way" all the time (e.g. Break/Stagger systems that are becoming more and more common).

But challenge is fun. That's kinda the point. Not everyone just wants a sandbox they can fling shit around in and still get gold stars telling you you're a winner. The point of a game is it's something to learn and build a skill at where there's a sense of learning and accomplishment. Which these games are great for for a certain age. But when the mechanics of Pokemon are so easy that you have to go out of your way just to make it not boring then what's the point? You're just flinging shit for gold stars.

There is a lot I don't like about Etrian Odyssey, but it gives you a boatload of options and a boatload of crazy challenges and let's you figure out how to actu get through. That's far more interesting than knowing I can make a team of literally any Pokemon and if I'm not half asleep, beating the game is going to be a breeze. The game doesn't give you a type-chart or anything at the beginning, you just have to go out and learn by doing. Exeggutor is one of the best gen 1 Pokemon, almost every competitive team uses one. Besides the great stats, being combined with one of the best types (Psychic) helps a ton. One problem with Grass types in gen 1 is that most are also Poison, which adds weaknesses to Psychic and Ground - both very common because Psychic and Earthquake are two of the best moves. The Grass type itself is mostly nice to have, since it's resistant to Ground and Electric. Most of its weaknesses besides Ice are rare against other players, since attacks from Fire, Poison, and Bug are rare. You might worry about Flying and Drill Peck if your opponent is using Zapdos or something, but otherwise Ice Beam and Blizzard are the most common moves to worry about. Very common attacks, but Exeggutor resisting both Psychic and Earthquake makes up for that.

Victreebel (and to a lesser extent Venusaur) would've been amazing without the Poison type. Razor Leaf is a great move in gen 1, since it almost always crits like Slash.

Yeah, that's something cool about the games. Pokemon actually makes you want to explore and get into random battles to catch more Pokemon. Of course the caves full of Zubats/Geodudes annoy some people, but even in those caves there's usually some rarer Pokemon to run into that keep things interesting.
