I've realized that I really like dodging huge ass enemy projectiles in classic Doom games but I can't remember any other first person shooter with this kind of gameplay. Other shooters rely on hitscanners. Does anyone know any other fps games with dodging being a major part of the gameplay?

Duke Nukem 3D, Shadow Warrior, and Blood, they feature dodgeable projectiles. They also let you dodge hitscans in some situations by strafing, or otherwise moving fast (crouching helps a lot in Blood specifically), as the enemy's point of aim isn't instant and actually needs to catch up to you.

The Quake games feature some projectiles also, enemies with guns are in fact seldom seen in the first one.

dude. You can't recommend someone build engine games when OP is saying he likes dodging projectiles. Blood is literally a hitscan hell and not worth playing if OP is into fast dodging rather than meticulously navy seals tactics

OP here, yeah, I like Build games, but their only "feature dodgeable projectiles". Doom is about dodgeable projectiles 80% of the time, not to mention that they are big and slow. Commander rockets and Trooper shots in Duke are small and fast, and most other enemies are hitscanners.

Serious Sam has a small number of hitscan enemies but most of them are projectile or melee. If you like Doom you'd probably like it, though it's more focused on combat challenges in big arenas rather than exploring mazes.

not as good as doom but mostly projectiles:
Slob Zone (Dos)
Ken's Labyrinth (Dos)
Bloodshot (sega genesis)
Gloom Deluxe (amiga)
Po'ed (3DO and PS1)

has projectiles but they are fast:
Dark Forces
Undying

not sure if counts as fps:
Magic Carpet
and
Descent for the first 7 or so levels
then they introduce heavy hitting hitscanners

I played Ashes and it is indeed awesome, the atmosphere is really nice and I didn't play the 2nd episode yet.
I still think that Heretic is a good option, there are no hitscanners at all and on black plague (Nightmare) it's quite fun.

By the way, did you play some modern wads as well? Slaughter(lite) maps might be your cup of tea, it looks like 3d shmups. I unfortunately don't know any wad avoiding specificaly hitscanners but it might be a thing.

Why didn't all devs make hitscan weapons automatically dodgeable as long as you're moving? Would've fixed Blood entirely.

if all you have to do is keep moving constantly, then hitscanners don't really provide a distinct threat from visible projectiles that are also effortlessly avoided by just moving constantly
blood has its own rules keeping cultists in line, though. you can stunlock them with the tommy gun or akimbo shotgun primary fire, jumping and crouching help throw off their aim, and you get tons of options for indirect fire

for a game more in line with what OP wants, build Powerslave has no hitscanners whatsoever in its enemy roster. it's all projectiles and melee, and much better designed than most of its contemporaries

Some Marathon enemies fire invisible bullets, but they're always avoidable by moving fast enough.
